A lovely new release from Billy Walker and his team at GlenAllachie distillery, released as part of 'The Wood Collection' series. Aged for 9 years in total and given some extra time maturing in Oloroso sherry butts, then bottled at a high strength of 48% vol, natural colour and non-chill filtered.
Oloroso Sherry goes through extensive ageing without a 'flor' yeast layer and is the darkest dry Sherry style with nutty, dried fruit qualities.

Heather honey, mocha and dried apricots, with notes of cinnamon butter, red velvet cake and marzipan.
Palate
Dark chocolate, honeycomb and butterscotch, leading to dried red berries, ginger and damsons, with poached apples and muscovado sugar.
