Palo Cortado is one of the rarest styles of Sherry, born when the 'flor' yeast layer naturally dies on a wine initially intended to become a Fino, the result is a uniquely complex cask that bridges the dryness of Fino with the nutty, darker fruit richness of Oloroso. Matured for eleven years in Palo Cortado puncheons and hogsheads, this expression delivers beautifully layered notes of ripe plums, dark mocha and warming cinnamon spice. Bottled at 48% ABV, natural colour and non-chill filtered, the full character of this exceptional cask finish is allowed to speak for itself.
