A beautifully crafted 12 year old single cask release from Daftmill Distillery, bottled in 2021 and drawn from a first fill Oloroso sherry butt. Selected by Francis Cuthbert of Daftmill and Jonny McMillan of Berry Bros. & Rudd, this UK exclusive release showcases the care, tradition and understated brilliance that define Scotland’s most authentic farm distillery. The Optic barley used for this vintage was grown in the Cuthbert family’s south fields and harvested in August 2006, before being malted in Alloa in the summer of 2007. Distilled on 5th August 2009 during Daftmill’s summer season, the whisky was matured for twelve patient years on the farm before bottling back in 2021.

Tasting Notes
Awards
Nose
Lots of deep and rich layers of leaf mulch, cellar earth, robust tobacco and cedar wood notes. unlit cigars, sultana and pine resin. An older style of sherry in many ways, one that shows immense richness and depth. Water enhances these deep earthy notes and brings out many more herbal qualities.
Palate
A little more peppery and spicy than the nose suggested, but still displaying some wonderful qualities of leather, tobaccos, damp earth, stewed dark fruits and even things like ruby ales and black olive bread. With water it becomes unexpectedly sweeter with caramelised muscovado sugars, lemon cough drops and dark fruit cordials.
Finish
Long and full of dark coffee and chocolate notes. Sweet dark beers, spiced breads and raisins.
