Distilled in 1978, cask #1 from the Constellation Collection started it's deep slumber (29 years) in American white oak. Transferred into a sherry butt cask that previously held Matusalem oloroso sherry for a further 4 years before being bottled at cask strength, 47.1% vol.
Matusalem Oloroso sherry is one of the most celebrated fortified wines in Spain. Produced only in the sherry district of Jerez de la Frontera, Spain from the famous Bodegas of Gonzalez Byass. They have been producing award winning sherry since 1835 and in 2010 were named 'Wine Maker of the Year' by The International Wine & Spirit Competition. The Dalmore single Highland malt has exclusive rights to these rare 'Matusalem' Oloroso sherry butts.
