The Palomino Fino and the Pedro Ximenez are two classic grape varieties which are found in the 'sherry triangle' of Spain. At the many fine Bodegas of the highly respected sherry House Gonzalez Byass a wide variety of different styles of sherries can be found from these two noble grapes. Cask #2140 which was distilled in 1980 has spent all it's slumber in an Apostoles Oloroso sherry butt, 31 years in total. Bottled at 52.1% vol, 227 bottles have been filled and made available for the Contellation Collection.
